Wrapped Scallops

2 pounds sea scallops
1 pound bacon strips, smoked
1 cup flour
1 cup cornmeal
1 teaspoon cajun seasoning
2 each eggs

Beat eggs well in a large bowl.  Put scallops in with eggs, toss.  Mix flour, cornmeal and cajun seasoning.  Coat scallops well with egg and roll in flour mixture.  Cut bacon strips in half, wrap around scallops securing with toothpicks, place on cookie sheet.  Bake in hot oven, 425° for 25 minutes. turning several times.  Serve hot.

This recipe works well using uncooked jumbo shrimp that have been shelled and deveined; however cook about 12 minutes or until bacon is a little crisp.  Great way to start a party!
