| Apple Cake
4 Cups Apples, peeled and sliced thin 2 Eggs 2 Cups Sugar 1/2 Cup Canola Oil 2 Teaspoons Cinnamon 1 Teaspoon Nutmeg 1 Teaspoon Salt 2 Cups All Purpose Flour 2 Teaspoons Baking Soda 1 Cup Chopped Walnuts
Mix apples, eggs, sugar with oil; set aside. Sift flour, salt, cinnamon, nutmeg & baking soda together. Slowly add flour mixture to apple mixture by hand. Batter will be a quite lumpy. Add chopped walnuts, making sure nuts are completely stirred into batter. Put batter into a lightly greased and floured 9" X 13" pan.
Bake in 350 degree oven for 45 minutes, or until a toothpick in the center is clean. Cake will be moist. Cool and dust top with powdered sugar or serve plain with vanilla ice cream.
This is a wonderful old recipe that my Grandmother used to make when her apples were ready to pick on their farm. |
